One of the nicer pineapple tarts I've had! The pastry is soft and the pineapples are not overpowering sweet.

This is very good. Again pineapple is a balance of sweet and sour. A small glitch is that the ratio of pineapple to pastry is a bit off. If you increase the pineapple to the same ratio of pineapple to pastry in the Melt in your Mouth pineapple tarts this pillow type will be excellent! Hope you can do it next year and I will buy more tins of this type.

I like the more firm pastry on the outside, it complements the soft and deep flavour of the pineapple filling.
